As you will discover in our commitments and our products, we are fundamentally committed to enhancing the skills of our ancestral cheese valleys. We produce high quality cheeses from the milk from small mountain farms around us (Barétous and Soule). Safeguarding this friendly mountain agriculture of this beautiful environment and animals is dear to us. She is also responsible for the creation of our traditional cheese.
That's why our entire approach of small cheesemakers registered with this motto to enhance our region. The flagship of our cheese is of course the goat cheese made from raw milk (PDO Ossau-Iraty) but we have also developed, in conjunction with the territorial tradition, a range of quality cheeses such as cow, sheep, cow mixture, the goat or sheep greuilh, regional specialty still unknown.
